A Very Delicious Tomato Sandwich

The classic tomato sandwich comes in strong in August, when farmstands and farmers markets are bursting with heirlooms, and I wouldn’t want it any other way. I’ve also snuck in a few slices of peach which adds a subtle sweet floral note. I’ve bumped up the mayo with a few pantry items which all serve to amp up that tomato flavor—sesame oil for a subtle nuttiness and soy sauce for umami. The finishing touch is a healthy dash of togarashi, which is a Japanese spice blend that usually contains chili flakes, sesame seeds, nori and other ingredients (there are many variations). If you can’t find it you can use chili flake and sesame seeds.


Serves 1

INGREDIENTS

4-5 ripe heirloom tomato slices
3-4 peach slices
1 large slice country bread, toasted
1 tsp toasted sesame oil
1 tsp soy sauce
2-3 tbsp Kewpie mayonnaise
1 tbsp chopped soft herbs such as dill, chives and basil
Extra virgin olive oil, for finishing
Flaky sea salt, for finishing
Togarashi, for finishing

METHOD

In a small bowl mix together sesame oil, soy sauce and mayonnaise. Generously spread onto toasted bread. Layer tomatoes and peach slices atop, then finish with a glug of olive oil. Add flaky sea salt, herbs and togarashi and serve immediately.
