Caesar Peas
I believe in all things Caesar and this is case in point. The savory umami of the classic dressing is the perfect counterpoint to sweet peas (I’m using frozen here, but if you have fresh, have at it). And truly, this dish is so easy it’s almost embarrassing. It uses bottled Caesar dressing—I prefer Brianna’s Asiago Caesar Dressing—but find your favorite that does NOT skimp on flavor.
It's the perfect holiday side (though listen, you can truly make this anytime of the year) when you’re juggling five other dishes as you can truly knock it out in 10 minutes.
Serves 4
INGREDIENTS
1¼ pound unthawed frozen peas (two 10-ounce bags)
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
¼ cup good quality Caesar Dressing such as Brianna’s
2 anchovy fillets, finely minced
¼ cup freshly grated Parmesan
Juice and zest of ½ lemon, plus more zest for garnish
Kosher salt and freshly ground black pepper
METHOD
To a skillet over medium high heat, add olive oil and butter. Once butter is melted, add peas along with 2 to 3 tablespoons of water. Season with salt and pepper. Sauté peas over medium heat until tender and just hot (do not overcook as the peas will become mushy)—about 4 to 5 minutes.
Remove from heat and stir in Caesar dressing, anchovy fillets, Parmesan and lemon juice and zest.
Transfer to a serving dish, finish with lemon zest and serve warm.
