Frozen Shaved Orange Creamsicle

Grating frozen fruit is having a moment—and I am here for it! My version recalls a childhood favorite—the creamsicle—and grating frozen oranges atop vanilla ice cream is the ultimate grown-up way to have it. Be generous—I recommend approximately ¼ of an orange for every 2 scoops of ice cream but if you want more, go for it. Lastly, a glug of your very best extra virgin olive oil adds a luxurious finish.


Serves 4

INGREDIENTS

1-2 oranges
Vanilla ice cream
Extra virgin olive oil

METHOD

Peel oranges, removing as much pith as possible, and freeze for at least 5 hours.

To serve, scoop ice cream into bowls and use a rasp-style grater to grate a generous amount of frozen orange atop. Drizzle with extra virgin olive oil and serve immediately.
