Ham and Jam and More Sandwich
My take on a classic jambon beurre—the iconic ham and butter sandwich seen in every boulangerie across France—adds a few simple pantry staples for a fun flavorful take. The sweet bitterness of marmalade, the creaminess of Brie and the addition of kimchi—that sour acidic crunchy umami is the perfect foil for all of the other players. And be sure to use the best European-style butter you can find—it will make a difference. I also specify Jambon de Paris as I find it less salty than other sliced hams—but truly any good quality, sliced deli ham will do.
Serves 4
INGREDIENTS
1 baguette
4 tablespoon unsalted European-style butter, at room temperature
Flaky sea salt
⅓ cup orange marmalade
½ pound of brie, cut into ¼” slices
8 ounces thinly sliced Jambon de Paris (French-style jam)
⅓ cup roughly chopped kimchi
METHOD
Cut baguette lengthwise, then spread each side with butter and sprinkle with flaky sea salt.
Spread the bottom slice with marmalade, then layer on brie, followed by ham. Top with kimchi. Top the sandwich, gently press down and serve. Sandwiches can be wrapped in parchment and refrigerated for up to 1 day.
