Hoisin Ginger Noodles

Serves 4

INGREDIENTS

3 tablespoon neutral oil (grapeseed or avocado)
1 tablespoon fresh ginger, finely grated
2 garlic cloves, finely grated
4 tablespoons hoisin sauce
1 tablespoons soy sauce
1 tablespoons sesame oil
2 teaspoons black vinegar
1 teaspoon maple syrup
2 tablespoons warm water
8 to 9 ounces noodles (lo mein or ramen)
1 tablespoon unsalted butter
4 green onions, thinly sliced
Toasted sesame seeds, for finishing

METHOD

Heat 2 tablespoons neutral oil in a small saucepan over medium-high heat. Add the garlic and ginger and sauté for about 30 seconds until fragrant. Remove from heat and whisk in hoisin sauce, soy sauce, sesame oil, black vinegar, maple syrup and water. Set aside.

Cook the noodles according to package directions until al dente. Drain and rinse briefly with cold water to stop cooking, then return to the pot.

Add sauce and butter and scallions and stir until noodles are glossy and coated.

Divide into bowls, finish with sesame seeds and serve.
