Luxardo Cherry Tapenade Crostini

The savory briny tang of olives and capers are the perfect match for the rich sweetness ruby-hued Luxardo cherries—these are Marasca cherries that have been dyed and jarred in a thick syrup of their own juice and sugar, resulting in that deep color, complex flavor and tender chew. These are the Rolls Royce of maraschino cherries—forget those pale red ones you know—Luxardo cherries are next level and are perfect not only for cocktails but for recipes as well. This tapenade comes together in a snap and is the perfect party bite—so festive with the green of the olive and the deep red of the cherries.

Luxardo Cherry Tapenade Crostini

Makes approximately 30 crostini

INGREDIENTS

2½ cups mixed pitted green olives, drained
3 tablespoons capers, drained
¼ cup fresh parsley leaves
2 teaspoons lemon zest
1 tablespoon lemon juice
2 tablespoons extra-virgin olive oil
½ cup Luxardo Maraschino Cherries, roughly chopped
Kosher salt + freshly ground black pepper
8 ounces goat cheese
1 baguette, sliced and toasted

METHOD

In a food processor, pulse olives, capers, garlic, parsley, basil, lemon juice and olive oil 10–15 times until coarsely chopped. Transfer to a bowl. Stir in Luxardo Maraschino Cherries. Season with salt and pepper. Spread goat cheese on toasted baguette slices, top with tapenade and serve.


Olive and cherry mixture can be stored in an airtight container in the fridge for up to 2 weeks.
