Marmite Glazed Nuts

Let’s talk Marmite. What is Marmite? It’s a savory spread made from yeast extract from the UK— it’s got the consistency of thick caramel and the taste is yeasty, soy-like, salty, almost meaty— it packs a punch with its concentrated flavor. These nuts are cinch to make and so delicious— the Marmite is going to impart a deep rich flavor to the nuts, and the addition of some brown sugar and cayenne will bring the heat and the sweet. Peter Som Flavor Chase Marmite

Makes 4 servings

INGREDIENTS

2 cups raw mixed nuts
1 egg white
2½ tbsp Marmite
1 tsp brown sugar
1 tsp coriander
½ cayenne pepper (optional)
12 thyme sprigs

METHOD

Preheat oven to 350F.

Mix egg white and marmite with a fork in a medium bowl. Add brown sugar, coriander and cayenne and mix to combine. Add nuts and toss to coat.

Spread nuts on a parchment-lined sheet pan in a single layer and add thyme sprigs. Bake for 10 minutes. Toss and return to oven and bake for another 5 minutes.

Remove from oven, stir a few times and let cool completely on trays. Remove thyme sprigs. Store in a tightly sealed container at room temperature for up to a week.
