Quick Oyster Sauce Noodles
This is the easiest pantry-friendly noodle dish that’s ready in 10 minutes—so much umami with a gentle heat from the chili crisp. It’s perfect as is or gussied up as you wish with a jammy egg, sliced chicken or even tinned tuna. A sprinkle of my Burlap and Barrel spice blend Feelin’ Snacky is the perfect finisher.
Serves 2-3
INGREDIENTS
10 ounces lo mein noodles
3 tbsp oyster sauce
1 tablespoon soy sauce
1 tablespoon chili crisp
1 tablespoon fish sauce
3 tablespoons unsalted butter, cut into 3 to 4 pieces
Peter Som x Burlap and Barrel Feelin’ Snacky spice blend, for finishing
¼ cup chopped or torn mint leaves, plus more for garnish
METHOD
Cook noodles according to package instructions. Reserve ¼ cup cooking water, then drain and return to the pot.
While noodles are cooking, make the sauce. In a small bowl, whisk together oyster sauce, soy sauce, chili crisp and fish sauce. Add the sauce to the noodles along with butter, pasta water and mint. Use tongs to stir until the butter has melted and a glossy sauce coats the noodles.
Transfer to serving bowls, finish with a dash of Feelin’ snacky and garnish with mint and serve.
