Roasted Pear and Iberico Ham with Blue Cheese, Hazelnut and Hot Honey

My dish of Roasted Pear and Iberico Ham with Blue Cheese, Hazelnut and Hot Honey is a delicious match. Serves 4

INGREDIENTS

4 bosc pears, cored and cut into 8 wedges
1 tbsp olive oil
¼ cup honey
1 tsp sriracha
10 oz Iberico ham or prosciutto, thinly sliced
4 oz Cabrales blue cheese or other blue cheese, crumbled
½ cup hazelnuts, toasted and chopped
1 tbsp thyme leaves, for garnish
Flat leaf parsley, for garnish
Kosher salt and black pepper
Flaky sea salt

METHOD

Preheat oven to 450F.

Arrange on a parchment-lined sheet pan in a single layer and drizzle with olive oil and season with salt and pepper. Roast 15-20 minutes or until tender.

In a small bowl, mix honey and sriracha.

Arrange pears and ham on platter. Follow with blue cheese and hazelnuts. Drizzle with hot honey, then follow with parsley, thyme and chives. Finish with flaky sea salt.

Serve warm or at room temperature.
