Sweet and Spicy Cucumber Salad

This crunchy vibrant salad is the quickest way to a warm-weather crowd-pleaser of side dish. The balance of heat and sweet makes it the perfect accompaniment to anything your grill will throw at ya.

Serves 4

INGREDIENTS

2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons chili crisp
1 tablespoon sesame oil
1½ to 2 tablespoons honey
2 pounds mini cucumbers, sliced into ½” rounds
2 tbsp sliced scallions or chives, for garnish

METHOD

In a medium bowl, whisk together soy sauce, rice wine vinegar, chili crisp, sesame oil and honey. Add cucumbers and toss to coat.
