Wonton Lasagna

A quick take on wontons in a fraction of them time—this take layers a flavorful pork mixture with wonton wrappers—the pork, a gentle steaming and just a few pantry seasonings create a savory, dumpling-like layered dish. So delicious—juicy, tender and deeply comforting.

Serves 4-6

INGREDIENTS

1 pound ground pork, preferably 80/20
¼ cup chicken stock or water
1 tablespoon neutral oil
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 teaspoon fish sauce
1 teaspoon sesame oil
1 teaspoon finely grated fresh ginger
1 small clove garlic, very finely grated
½ teaspoon white or black pepper
1 scallion, very finely minced, plus more for garnish
20-25 square wonton wrappers
Neutral oil for brushing the dish and the top
Chili crisp, for finishing

METHOD

In a medium bowl, combine the ground pork, chicken stock, neutral oil, oyster sauce, soy sauce, fish sauce, sesame oil, ginger, garlic, white pepper and minced scallion. Mix gently but thoroughly until well combined.

Lightly oil a shallow, heatproof dish (approximately 8” diameter) that fits inside your steamer. Arrange a layer of wonton wrappers on the bottom, overlapping them slightly so there are no gaps. Spread about a third of pork mixture atop in a thin layer over the wrappers, taking care to distribute it evenly. Continue layering wrappers and pork in this way, making 3 layers of pork and finishing with a layer of wrappers on top. Lightly brush top with oil.

Set up a steamer over gently boiling water. Place the dish inside, cover and steam over medium-high heat for 18–22 minutes, until the pork is cooked through and the wonton wrappers are tender and translucent.

Remove the dish from the steamer and let it rest for about 5 minutesbefore serving. Garnish with sliced scallions and serve warm with chili crisp alongside.
